I am trying to find a nice balance between holiday and monthly themed recipes, with regular every day meals for Recipe Club. I am not doing the best job with every day meals, I just can’t pass up a good theme. Maybe next month. This month I had to go with a St. Patricks/Irish dish.
I went back and forth on a couple dishes, but ended up picking Bangers and Mash because I had never tried it and thought more people were likely to try it over Irish Soda bread. Which I am dying to try as well.
The recipe is very simple, just Irish sausage, mashed potatoes, gravy and peas. Nothing very complex, but all delicious when combined. The absolutely key to this recipe is the onion gravy. It packs so much flavor the recipe is nothing with out it.
As a bonus, this is a great meal that can be made ahead. Make the potatoes, boil the sausage, make the gravy (or at least caramelize the onions, did you know these can be canned and stored!), then just heat everything up separately and enjoy!
