When Pipsnacks reached out to me about creating a recipe with their Pipcorn, I was so excited. I am a huge popcorn lover, as is my entire family, so I was excited to create something with them in mind. I had also just created the movie bark for the December magazine, so my head was already spinning with popcorn centered sweets.
Have you heard of Pipcorn? Pipcorn is a mini popcorn snack that comes in different flavors: Kettle, Truffle, Sea Salt and Rosemary. There are no hulls to get stuck in your teeth and it is vegan, gluten free, and non-GMO. Pipcorn never gives me the sick feeling I normally get after eating popcorn.
Back to the popcorn desserts. When I first started thinking up ideas, I was imagining brownies, bars, or even a cake, but never cookies. So it took me a minute to wrap my head around the idea of popcorn in a cookie, but you guys, I am so glad I did! These cookies are delicious, and I am ready to put Pipcorn in all of my cookies.
I tend to eat popcorn all throughout the day, but I always associate popcorn with going to the movies. So when coming up with a cookie recipe, I wanted it to taste like you were actually at the movies.
These cookies are a take on the classic milk duds and popcorn movie snack. The kraft caramels in the center are key to replicating the milk duds. The first time I made these cookies, I just used dulce de leche, and they were good, but I didn’t get the milk dud feel. I added in the Kraft caramels, and it was the perfect ratio of caramel, chocolate, and popcorn.
I know that a full bag of Pipcorn seems like a lot in a cookie recipe, but believe me, you need it. Having the full bag in the recipe allows there to be enough Pipcorn in every cookie to feel like you are grabbing a handful of popcorn from the bag.
These cookies also make the perfect addition to a holiday gift for any movie lover. I packaged about a dozen up in a cellophane bag, add a bag of Kettle Pipcorn, a favorite candy, and a gift certificate to the movies. I gave this to my mom, who loves Cineoplis more than anything, but it would be perfect for a secret santa gift, white elephant gift, or even a hostess gift.
