When I was going through my list of recipes to post and came to “cauliflower pizza” my first thought was, oh, cauliflower crust pizza again? Why would I do that? I quickly remembered that it was anything but cauliflower crust.
The Buffalo Cauliflower Pizza from the Spring magazine may have cauliflower, but its far from rabbit food. I have tried to cut back on the amount of meat I eat, not become a full vegetarian or vegan, but simply be more deliberate about the meat I do eat. I realized I was adding meat to almost every dish I ate without thinking about it.
This cauliflower pizza is a dish that I would normally add shredded chicken to because when I think of buffalo sauce, I think chicken. I tried it both ways prior to publishing and the cauliflower was the clear winner.
This pizza would be a great dish to serve at a football Sunday party as a vegetarian option, that meat eaters would enjoy as well!
