When you think of Grandmothers, you don’t think kale. Especially my Grandmother. My grandmother is known for her cookies, ice cream, hot fudge, pastries, etc. But her kale salad, mainly the dressing she tops with with is her latest hit. When my cousin and I were up visiting her, she made it for us every night, and then we proceeded to replicate it ourselves when we were together in New York. It’s good. It’s easy. And it keeps well.
When I drove up to visit her last month, I picked up post cards with the intention of using them for Recipe Club. I didn’t know exactly what recipe I was going to use, but I knew I would use the post cards. After eating this salad about 15 times during the month, I knew I had to share.
