I am trying to be concise of my dairy choices; picking up goat milk cheeses, or well-aged options, and trying vegan options when offered. The nacho cheese recipe from LA Eats (and Gracias Madre) makes a good amount for the cauliflower, and ample leftovers. I knew I had to stop eating it by the spoonful so I wanted to find a recipe option that worked.
I am a huge nacho fan, sometimes I just go to sporting events to eat that chemical goodness. And on the days our chef at work makes them, I forget all about my depressing, healthy lunch I packed. If I had to pick one food for the rest of my life, I am pretty sure I would go with nachos.
I had Naturally Ella’s Chipotle Sweet Potato nacho’s pinned for a while, I figured it was time to try them out. I substituted her nacho cheese for my vegan recipe, which you can find here. I also went with these tortillas, I can’t have chips in my house, or I will devour the entire bag, so having these, I ate them a little slower. Plus I didnt have any small broken pieces!
