I mentioned earlier that I over the weekend I was obsessing over pineapple basil cocktails. It all started with an instagram photo of one, no recipe, no link, not much to go off of, but I knew I needed to have one.
I looked over a few recipes on line but ended up just making it up as I went. I experimented with a few variations this weekend, and am pretty sure the below will be my go to drink for the last few weeks of summer.
Pineapple Basil Cocktail
5-6 basil leaves
2 oz of gin
6 oz pineapple juice (3/4 cup)
optional: bubbly water
Tear basil leaves in halves or fourths. Place in the bottom of the shaker. Muddle a little.
Add the gin, and muddle more. The more you muddle, the stronger the basil taste.
Add pineapple juice. Shake.
Pour over ice, garnish with basil.
Top with bubbly water if you would like a tamer pineapple taste.
