I have been eating a ton of fish recently. Not on purpose, it just always sounds good so I go with it.
But fish can get boring and bland, so I am constantly looking for new ways to make it a bit more exciting.
Enter butters. Super easy to whip up while your fish is cooking, and it has butter, so it tastes amazing by default. If you arent so into butter, the seasoning I used on this fish made it tasty all on its own.
Also, I used cod, but the recipe called for sea bass. I couldn’t find sea bass, so I believe any white fish will do just fine!
I promise this recipe is ridiculously simple but will wildly impress your friends and family! Enjoy!
Pan Seared Cod with Pistachio Butter:
Ingredients for the fish:
2 pieces white fish (I used cod)
2 tbs EVOO
1 tbs butter
Ingredients for the pistachio butter:
1/4 cup pistachios
4 tbs butter
Directions for the fish:
Add EVOO and butter to pan, heat on medium
Season both sides of fish with garlic powder, salt, pepper, and smoked paprika.
Sear fish for about 4-5 minuets on each side. Until crisp.
Squeeze fresh lemon juice, if desired
Top with pistachio butter
Directions for the pistachio butter:
Grind pistachios until small powdery pieces remain. (I used a hand blender so mine wasn’t so fine, I think it worked well. But a food processor works best.)
Add to soft, room tempeture butter.
Mix until well combined.
