When I got the February issue of Bon Appetit and it was filled with Mast Brothers chocolate recipes for Valentines, I knew I’d be in love. The second I saw this recipe I knew I was making it for Valentines dinner. I texted Andrew right away to say I’d be in charge of dessert.
I don’t think I have ever made a cake from scratch. I have made cupcakes, and cake pops, and cakes in mason jars, okay so I have, but I have never made a real cake pan sort of cake. It was easy. Really it was. And the ingredients are simple.
My only recommendation is that when you are mixing the melted chocolate combination and the eggs, is to really let it fluff up. I wasn’t really sure what “mousse-like consistency” was but my guess is that it meant thick. When my cake was cooling, it sank, and I think that I can attribute it to not being mousse-y enough. It worked out, it just meant more red wine glaze to enjoy.
This cake is by no means just for Valentines, it is perfect to help celebrate any occasion. My mom has already requested to try it for her birthday next week!
I do not think kids will like it, forget about the wine, it is more rich than sweet, and kids don’t seem so into that!
