BBQ chicken salad has long been one of my favorites! I had been craving it for quite sometime but always hesit buy ranch, Ill put it on everything if it is in my house!
The salad it self is quite simple, and perfect for customization!
I season the chicken with salt and pepper and a dash of garlic powder and put it on the grill pan. Then after about 10 mins I put some BBQ sauce on it and let it cook through. Once the chicken is done I chop it up, or shred it, and toss it in more BBQ sauce.
I cut up some tomatoes, green onions, avocados, black olives, and toss it with lettuce, and lime juice. Then add in the BBQ chicken.
And finally my favorite part, the avocado dressing! To me this is what makes the salad! As much as I love ranch dressing, I know it isn’t the best for me. I had never made my own dressing, but when I found this dressing it looked easy (it is!) and sounded like it would taste amazing (it does).
Mash 1 avocado.
Mince 1 clove garlic.
Combined mashed avocado, 1/2 cup plain greek yogurt, minced garlic, juice from 1/2 lime, 1/4 cup of EVOO.
Combined in food processor or hand mixer. Add salt and pepper to taste. Add additional lime juice and EVOO if desired.
Mix into salad, top with mexican blend cheese and enjoy!
