Banana bread has always been my favorite. My mom made it when I was little and I always thought it was the best. I havent been able to find the recipe she used, but I have found this one, and it has been a hit! It is very simple, and it has allowed me to alter it here and there.
My favorite trick is to soak the bananas. It started as soaking the mashed bananas in the vanilla and cinnamon for an hour while I went for a run. When I got back, ready to bake, I was out of sugar so I sealed up the goop and let it sit in the fridge for a day. That batch was the best I had ever made, and I always soak the bananas for at least a day now!
Also, if you have time, brown the butter! Everything is better with brown butter!
And coffee. Always coffee.
